Manual wine press

Thinking ahead for our future harvests, we tested a manual wine press using Pinot Noir grapes grown on our Hintenberg vineyard parcel....not bad at all!! After three weeks macerating in a stainless steel vat with regular stirring, it was ready and the juice poured out ! At present it is ageing in a 228 litre barrel and will not be on sale until 2018...prepare yourself for something really good!

PT fergussonAnd if we choose to slow down ? to find another rythm ? try other ways to share a vineyard. We thought a lot about these opportunities planting the Hinterburg vineyard this spring, we need to thinks about vines and trees and complementary plants.... we need to find out more, to learn, to experience. Visit to permaculture place Belchenbach

belchenbachWe left early in the morning to meet Sabine and Alain who leave at 1000 meters altitude in the Vosges mountains. Eco lodging and bio vegetarian host table, the Belchenbach is also a training center for permaculture during the courses organized by Alain Schill. Do not hesitate to register and visit the place to discover that permaculture is not a set of gardening techniques but much more! This course will allow you to discover the spirit, the concepts, the techniques to be put in place right away in your home and also to go further in the implementation of a global ecology thanks to permaculture. We learned a lot from our friends and will try to use it

Planting Hinterburg vineyard

IMG 7124It was the perfect vineyard for gewurztraminer late harvest but the more than 65 years old stocks came to the very end of their lifes. After a short rest we decided to choose several differant selections of pinot noir for the next generations.... and planted 2000 stocks inbetween a lot of showers during the month of may 2016...
